Shepherd's Pie
This is the fastest way I have found to make a delicious Shepherd's Pie. You can definitely spruce this up by adding things like gravy to the mix, but this is a quick casserole for those busy nights. This is a family favorite!

INGREDIENTS

6 large potatoes, peeled and cut into cubes
2 tbsp butter
Salt and pepper to taste
1 can or jar peas
*Optional: Carrots
1 lb ground beef
2 tbsp ketchup
Shredded chedder cheese

DIRECTIONS

Preheat oven to 375 degrees F.
Cook potatoes in a large pot of water or in a pressure cooker until tender.
Brown ground meat in a large pan with salt and pepper to taste. Add ketchup and stir well. Add peas (and carrots if desired).
Drain potatoes and add butter, salt, and pepper. Mash potatoes.
Spread the meat and peas mixture on the bottom of a 2 quart casserole dish. Top with the mashed potatoes and cover the mashed potatoes with shredded cheese.
Bake in 375 degree oven for 20-30 minutes or until golden brown.

NOTES

*If adding carrots just reduce the amount of peas added by the amount of carrots you want.
